I enjoy my breakfasts and always try to incorporate fresh and healthy food and drinks in my first meal of the day. One of my favourite breakfast dishes is the Indian Masala Omelette. It tastes yummy and is very simple to make.

Here is my recipe:
- Beat 2 eggs in a bowl.
- Season with Salt, 1/2 tsp. cumin seeds, 1/2 tsp. Garam masala and 1/2 tsp. Chilli powder.
- Add chopped veggies. I usually add finely chopped Onion, Mixed peppers(for the colour), Green chillies, Mushrooms and 1 clove Garlic.
- Mix well and pour the mixture into a greased pan.
- Swirl the pan until the omelette mixture is cooked underneath. Then gently flip it over and cook for a few minutes. And you are done.

It's as simple as that. While I normally use Olive Oil or Hemp Seed Oil while making omelettes, for the past week I have been trying out the Fussels Rapeseed Spray Oil. One of the main reasons I was excited to make this shift was because Rapeseed Oil is lower in Saturated fats and higher in Omega 3 than Olive Oil. I also like the fact that the oil comes in a spray bottle which means I end up using much less oil than I would normally use. The oil has a nutty taste which I love and it works well whether you are roasting, shallow frying or using it in a stir fry. It is a store cupboard essential if you are looking for a healthy cooking oil.

Fussels Rapeseed Oil is a single estate, extra virgin, cold pressed oil that is always bottled fresh. It has a much higher burn point(>200 deg centigrade) making it a very versatile oil. You can read more about the health benefits of rapeseed oil here. Fussels Rapeseed Spray Oil(RRP £2.49 for 200ml) is available from Tesco stores across the UK, farmers’ markets in the south and nationwide from their website.
