Judge, whose products I have featured many a times on the blog, recently launched a new collection - The Black Radiant Cookware Collection. Radiant is a dynamic range of cookware that comes with a 10-year non-stick guarantee and is suitable for all hob type. The new range which has the same excellent quality as the other offerings from the brand is available in black.

I received two products from the Black Radiant Cookware Collection and have used them over the past few weeks. Have used them to cook a number of dishes but am sharing one of my favourites - Lemon Rice, which is so easy to make in the Stir Fry/Wok.

First a few pointers on what makes this range from Judge stand out:
- The Radiant range makes use of Teflon’s very latest non-stick surface which is PFOA free. This is a 3-layer non-stick, with integrated ferrous particles which accelerates heat transfer through layers resulting in a even heat distribution across the pan's surface.
- The non-stick has been applied to a thick, highly efficient aluminium body.
- The aluminium has been sealed with a heat-proof metallic black paint which not only looks good but is also hard wearing.
- The pans come with matching soft grip handles and knobs.

The crepe pan with its PFOA free, non-stick surface is great for healthy cooking. I was a little worried while making dosas (which are Indian-style pancakes) that they might stick to the pan and might be difficult to remove from the pan. But my worries were unfounded as not only did the dosas not stick (even with very little oil) but they were also very easy to remove due to the low sided walls of the pan.

Judge Black Radiant Stir Fry / Wok


The wok is also very well made and allows for versatile cooking. Just like the crepe pan, the PFOA free, non-stick surface means I have been using less oil than normal for cooking. It is easy to handle the wok - in addition to a soft grip handle, a helper handle has also been provided for additional support.

Lemon Rice | Recipe


This is a very simple dish that is normally made with leftover rice. You can serve it with raita or chutney.

Lemon Rice Recipe


Ingredients
- 1 tsp mustard seeds
- 1 tbsp white urad bean (Vigna mungo bean)
- 2 green chilies (chopped very finely)
- 1 whole red chilli (dried variety)
- 2 tbsp roasted peanuts
- 1 tsp turmeric powder
- Sunflower cooking oil
- A pinch of asafoetida
- Juice of 2 lemons
- Salt
- 2 cups leftover rice
- 2 tbsps green peas (optional)

Method
- Heat the oil in the wok. Add the mustard seeds and Urad dal. Fry till the mustard seeds splutter and the dal turns brown.
- Add the chopped green chilies and the whole red chilli. Add the asafoetida.
- If you are adding green peas, add them now.
- Add the peanuts and fry for a couple of minutes.
- Add the turmeric powder.
- Turn off the heat and add lemon juice.
- Mix well.
- Add the rice. Season with salt and mix again.
- Serve with chutney or raita.
