Uttappam - Indian Pancake


Last month I received a crepe pan from Judge Cookware's Radiant collection. Radiant is a dynamic range of cookware from Judge including frying pans, Crepe, Wok and milk pan. This year saw the introduction of new individual cookware pieces, new sizes of fry pans & stir fry woks as well as pan sets being added into the already popular range.

Key features of the Radiant range

- Teflon’s very latest Radiance non-stick surface which is PFOA free. A 3 layer non-stick coating that integrates ferrous particles which accelerate heat transfer through the non-stick layer thus creating a very even heat distribution throughout the pan.
- Teflon radiance applied to a thick aluminium body to provide a speedy and most importantly even heat transfer making
it ideal for efficient cooking.
- The aluminium is sealed with heat proof metallic red paint which looks gorgeous and is quite hard wearing.
- Soft grip handles and knobs add to the ergonomic use of the pan.

The 26cm non-stick crepe pan


The crepe pan uses Teflon® Radiance Stainless steel reinforced non-stick and is suitable to be used on all types of hob. It is suitable for use in ovens too (up to a temp of 150°C). I have been using the pan for a few weeks now and have been impressed. The quality and construction are good and the pan works nicely on the electric hob. It is well built yet light-weight (which I like as I find lifting heavy vessels difficult due to my arthritis). The handle is soft grip and easy to hold. The pan is very easy to clean by hand and is also suitable for dishwasher use.

Uttappam (Thick Indian Pancake)


Uttappam is a thick Indian pancake which is made with a batter of lentils and rice. The ratio is 3:1 (white lentils:parboiled rice). The lentils and rice are soaked overnight and then ground and fermented until the batter rises. The steps post that are similar to any other pancake. Spread the batter on a hot pan and gently spread it in a circular motion. Top it with chopped onions, tomatoes and chillies. Flip it once it starts turning brown on one side. Uttappam's are usually served with coconut chutney.
